The cutting height is how much of the table edge router bit is used to shape the edge, impacting the depth and scale of the profile. The ideal cutting height will depend on your tabletop thickness and the desired profile depth. A taller cutting height allows for deeper or more complex profiles, while a shorter height is sufficient for subtle detailing. An example is the Amana Tool 49550 which I use a lot in my shop and has a 5/8" cutting height, great for wide but shallow profiles, while the Amana Tool 49554 features a 3/4" cutting height for more elongated designs. With various cutting heights available, you can choose the best fit for your tabletop thickness and for the customers design goals.
